Sun Withering The leaves are spread outdoor and the evaporation process is accelerated by the heat energy of sunshine. The leaves ferment along with the oxidation. The light green leaves gradually turn into dark after the withering process and they begin softening after the evaporation of water.

Fermenting Fermentation is the oxidation process when the water and ingredients in the leaves are exposed in the air. Spread the leaves evenly in the container, and make it ferment.
Drying Dry tea leaves with high temperature to control the moisture to be less than 4% in tea leaves, to stabilize its aroma and taste, and to reduce the astringent taste. As a result, this can enhance the quality of tea. This step consists of three to four times of drying, and the dried tea is called Maocha(Raw tea).

How to brew Black Tea
Teapot- Hot Steeping 1.Preheat teapot. Take 6-7 g tea leaves and put it into a teapot. 2.Add in 100 ml boil water 90℃-95℃(194℉-203℉) and brew it. For the first brew, steep and close the lid for 15 seconds, and pour. For the second brew, steep and close the lid for 20 to 25 seconds (Depending on personal tastes.)3.It can be repeated 4 to 5 times.
Mug 1.Take 2 g tea leaves and put it into a mug. 2.Pour boiling water into the mug and brew for 2-3 minutes and enjoy.
Cold Brew 1.Place 6 g tea leaves into 750 ml spring water. 2.Keep it in the refrigerator for 10 hours and it will be ready for drinking. 3.If you wish to extend the life of the cold tea, remove the tea leaves from the bottle and always keep the tea in the refrigerator.
